We began in Barcelona and finished in Tolosa, around the grill at Casa Julián.
Between those two tables, The Grand Spain Tour took us through the Catalan countryside, Madrid and the Basque Country. There were long tasting menus, seafood lunches, evenings of pintxos and meals built around the grill.
At Estimar, Els Casals, Disfrutar, Alkimia, Desde 1911, DiverXO, Etxebarri, Elkano and Casa Julián, the people behind our meals opened up and shared their knowledge.
They made time for my questions and let me keep digging. I wanted to understand the ingredients, the preparations, and the decisions behind what reached our table. Their generosity gave these stories so much detail.
I wanted to keep those conversations alongside the photographs.
